1.

Supervises culinary department staff in thedaily operation and menus preparation that meets nutritional specifications asoutlined by national guideline.

Ensures compliance in the Plan of Care andTherapeutic diets of each resident taking into consideration residentallergies, intolerances and preferences.2.

Participates in the recruitment and selection ofdepartment staff to ensure appropriate competencies and skill sets are obtainedto carry out the functions of the Food and Nutrition Services department.3.

Provides orientation training to new staffmembers and ongoing coaching to current staff.4.

Prepares and submits food /supply orders fromapproved sources per Federal, State and local guidelines.

Audits supply stockto ensure the department has sufficient food supply and working equipment atall times.5.

Ensure staff follow all food safety standardsfor preparing, serving and storing food in accordance to Federal/State andLocal guidelines6.

Inspects the food service areas and equipmentensuring they are clean and safe.

Ensures the facility is meeting communityfire safety, infection control and hazardous chemicals regulations andpolicies.

Takes prompt action to address any unsafe conditions or equipmentproblems.7.

Greets and obtains feedback regarding the diningexperience from residents, visitors, and staff.

Interacts with residentscourteously, respecting individual dignity and resident rights by upholdingconfidentiality standards at all times.8.

Ensures the Food and Nutrition Servicesdepartment stays within budget.

Maintains records that reflect food audits,supplies and labor costs.

Education & Experienceyou need to qualify: You must be a certified dietary manager or certifiedfood service manager.

In lieu of having current certification, you must bewilling to complete course work and become certified within one year.

Inaddition, you must meet state requirement certification for the state in whichservices are provided.

At least one year (1) supervisory experience or threeyears (3) working in the dietary area in a health care environment preferredExperience with budgets, food supply orders, andinventory audits helpfulMeet qualifications as required by local orstate regulations.
