We have a commitment to understand, define, and deliver what our guests want and represent our company by being professional and courteous to all.Responsibilities• Completes opening and closing checklists.• Refers to Daily Prep List at the start of each shift for assigned duties.• Understands and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.• Portions food products prior to cooking according to standard portion sizes and recipe specifications.• Maintains a clean and sanitary work station area including tables, shelves, walls, grills, broilers, fryers, flat top range and refrigeration equipment.• Reports equipment and food quality problems to supervisor in a timely manner.• Informs supervisor immediately of product shortages.• Uses our Standard Recipe Card for preparing all products.• Washes, peels, cuts, and seeds vegetables and fruits.• Assists Cooks engaged in preparing foods.• Cleans meats, poultry, and seafood.• Dips food items in crumbs, flour, and batter to bread them.• Stirs and strains soups and sauces.• Weighs and measures designated ingredients.• Carries pans, kettles, and trays of food to and from workstations, stove, and refrigerator.• Stores foods in designated areas following proper procedures.• Cleans and sanitizes work areas, equipment and utensils.• Uses all kitchen equipment following proper procedures and training.• Segregates and removes garbage.• Follows proper cleaning and sanitation procedures at all times.• Fills and maintains food and condiments line.• Distributes supplies, utensils, and portable equipment.• Stocks and maintains par levels as well as workstations in the kitchen.• Communicates with cooks relaying food usage and quality control.• Checks for proper temperature and time control for all items on the line.• Follows proper HAACP guidelines when handling, preparing, storing or stocking food items.• Correctly completes all required paperwork per company procedure.• Follows standards for merchandising, stocking, rotating and storing all products.• Follows all food safety and sanitation guidelines as applicable.• Attends all mandatory department, casino and/or training meetings.• May assist other food and beverage staff as needed.• Follows all department and casino policies, procedures, and regulations as required.• Ensures compliance with Tribal, State, Federal, and NIGC regulations.• Ensures control/protection of company assets as applicable.• Works days, nights, weekends, special events and holidays as needed.• Duties, responsibilities, requirements and expectations pertaining to this job are subject to change as needed.• Work nights, weekends and holidays as required.• Performs other duties as assigned.Qualifications• Exceptional guest service skills required.• Must be at least 18 years of age.• One to three months experience in kitchen/food preparation or equivalent combination of education, training and/or experience.• Ability to work days, nights, weekends, special events and holidays as required.Certificates, Licenses, Regulations• Must be able to obtain and maintain a Class B gaming license from the Stillaguamish Tribal Gaming Agency and Washington State.• Must be able to obtain and maintain a Washington State Health Card (Food Worker Card).Physical Demands and Work EnvironmentConstantly requires the ability to receive detailed information through oral and written communication. The position requires exerting up to 50 pounds of force occasionally, and/or up to 20 pounds of force frequently, and/or up to 10 pounds of force constantly to move objects. Requires repetitive movement daily with sedentary work, occasional bending and crouching. This is a 24 hour, 7 days a week work operation.
